At Teardrop Cocktail Lounge, where housemade tinctures, bitters and infusions abound, this sweet-and-savory recipe qualifies as one of the simpler cocktails on offer.
1 1/2 oz. reposado tequila
1 oz. lemon juice
3/4 oz. Lustau East India sherry
1/2 oz. grade-B maple syrup
1/2 oz. egg white (pasteurized if you like)
Tools: shaker, strainer
Glass: coupe
Garnish: shaved orange curls
Shake ingredients without ice for 30 seconds, then with ice. Strain into a chilled glass and garnish.
