When Kelsey Ramage competed in the global bartending competition Speed Rack, the only bartender to do so in three countries—the U.S., Canada, and the U.K.—she was prompted to create "a sustainable Daisy or Daiquiri with savory notes." Tapping into her experience with Trash Collective, she built a Daisy around tequila and played up the spirit's vegetal notes with arugula and celery bitters. "Radish was too harsh, so arugula seemed the right bet," she says in A Quick Drink: The Speed Rack Guide to Winning Cocktails for Any Mood from Speed Rack founders Lynnette Marrero and Ivy Mix. "From there, celery bitters for grassiness and a bit of bianco vermouth to soften it all out."
