Elderflower Spritz

A sparkler featuring fresh citrus, floral notes, and a touch of herbaceousness.

For warm days, serve up this light and refreshing elderflower spritz courtesy of Charleston’s By the Way neighborhood restaurant. Inspired by the popular Hugo Spritz, Chef Alec Gropman adds grapefruit for citrusy brightness and thyme for aromatic depth, “making the drink feel crisp and layered rather than overly sweet,” he says.

Ingredients

  • 1 1/2 oz. gin
  • 1 1/2 oz. fresh grapefruit juice
  • 3/4 oz. fresh lemon juice
  • 1/2 oz. elderflower liqueur
  • 1/2 oz. thyme syrup
  • sparkling wine, chilled
  • Glass:wine
  • Garnish:thick grapefruit slice and thyme sprig

Preparation

Fill the glass with ice, add all of the ingredients except the wine, then lightly stir to combine. Top with sparkling wine.
Thyme Simple SyrupBring 4 oz. of thyme, 2 cups of water, and 2 cups of sugar to a boil. Remove from heat and allow to steep for 1 hour. Strain and cool. Will keep in the refrigerator for a week.
