Doogh: A Salty Mint Yogurt Soda

Yogurt’s richness is lightened with effervescence and the bright flavor of mint. 

Ingredients

Yield:4 to 6
  • 2 cups full-fat plain yogurt
  • 2 tsp. dried mint
  • Pinch of sea salt
  • 1/2 tsp. black pepper
  • 4 cups chilled seltzer
  • Tools:large bowl, whisk, blender
  • Glass:tumbler or large rocks
  • Garnish:fresh mint

Preparation

Put the yogurt in a large bowl. Add the dried mint, rubbing it between your palms to release the flavor. Add the salt and pepper, and whisk in the seltzer until the mixture is frothy. If the dried mint leaves are large, put the doogh in a blender and blend for 1 minute to break them down a bit. Salt to taste. Fill glasses halfway with ice, pour in the doogh, and garnish with fresh mint.
