Don the Beachcomber’s Nui Nui Cocktail

With two types of rum and a medley of citrus and spice, Don the Beachcomber’s Nui Nui is a tropical delight.

Laura Newman’s take on Don the Beachcomber’s Nui Nui cocktail stays close to the original. “I’m often surprised at how many tropical cocktails skew too alcohol-forward or overly sweet, but this one is a detectable balance of fruity, tart, and boozy,” she says.

Ingredients

  • 1 1/2 oz. rum (Newman uses Don Q Gold)
  • 1/2 oz. Jamaican rum (Newman uses Appleton Signature)
  • 1/4 oz. St. Elizabeth's Allspice Dram
  • 1/2 oz. fresh lime juice
  • 3/4 oz. fresh orange juice
  • 1/2 oz. cinnamon syrup
  • 1/2 oz. vanilla syrup
  • 3 dashes Angostura Bitters
  • Tools:shaker
  • Glass:Pearl Diver
  • Garnish:fresh flower, orange twist

Preparation

Combine all of the ingredients in a shaker tin a small amount of crushed ice and shake. Pour all of the contents into a glass, top with more crushed ice, then garnish.

Cinnamon Syrup: Combine 8 cinnamon sticks with 4 cups of water and 4 cups of white sugar in a saucepan and bring to medium heat. Stir to dissolve the sugar, remove from heat and let cool. Store in quarts without removing cinnamon sticks.

Vanilla Syrup: Cut 1 vanilla bean in half, lengthwise, and use the dull side of the knife to remove the seeds. In a saucepan, combine the sliced vanilla with 6 cups of granulated sugar and 6 cups of water. Bring to medium-high heat and simmer until dissolved. Let sit at room temperature for at least 1 hour before fine straining.
