Daily Rituals: A Carajillo Martini

With an eye toward flavor balance, Allison Larson, bar lead at San Diego’s Polite Provisions, aimed for a mash-up of two coffee classics for this cocktail. “I was inspired by the idea of marrying the Espresso Martini with the concept of a Carajillo,” says Larson. “I prefer a well-balanced cocktail—nothing too sweet—and the amaro in this cocktail helps to ensure that balance and offers some much-needed depth.”

Ingredients

  • 3/4 oz. aged rum
  • 3/4 oz. Amaro Meletti
  • 3/4 oz. cold-brew coffee
  • 1/2 oz. coffee liqueur
  • 1/4 oz. Licor 43
  • 1/4 oz. aquafaba solution (or fresh egg white)
  • 2 dashes mole bitters
  • Tools:shaker, strainer, fine strainer
  • Glass:coupe
  • Garnish:sea salt, espresso powder

Preparation

Add all of the ingredients to an ice-filled shaker. (If using aquafaba, Polite Provisions recommends making a solution by mixing 1 tablespoon aquafaba powder with 1 cup of water, then use 1/4 oz. of the solution for each drink.) Shake well, then double strain into a chilled glass. Allow the foam to settle and firm up before garnishing with a sprinkle of sea salt and espresso powder.
