"The inspiration behind this cocktail began with my love for the Margarita," says Omar Bautista, beverage manager of Boro Brine in New York City. Using the tequila classic as a template, he layered the bold flavors of passion fruit and Aperol with the sweet vegetal notes of ají peppers for a refreshing and aromatic cocktail. Bautista says that any tropical pepper will work, too, or swap in red or yellow bell peppers for a more vegetal profile.
