Cinder Bloom: A Tequila Cocktail With Passion Fruit and Peppers

“The inspiration behind this cocktail began with my love for the Margarita,” says Omar Bautista, beverage manager of Boro Brine in New York City. Using the tequila classic as a template, he layered the bold flavors of passion fruit and Aperol with the sweet vegetal notes of ají peppers for a refreshing and aromatic cocktail. Bautista says that any tropical pepper will work, too, or swap in red or yellow bell peppers for a more vegetal profile.

Ingredients

  • 1 1/2 oz. blanco tequila
  • 3/4 oz. fresh lemon juice
  • 1/2 oz. Aperol
  • 1/2 oz. passion fruit liqueur
  • 4 muddled ají dulce peppers
  • 1/4 oz. cane syrup (2:1)
  • 2 dashes orange bitters (optional)
  • Tools:muddler, shaker, strainer
  • Glass:rocks or double Old Fashioned
  • Garnish:grapefruit wheel

Preparation

Place 4 ají dulce peppers in a shaker and muddle. Add the rest of the ingredients along with ice. Shake hard for about 5 seconds, or until the outside of the shaker is frosty. Strain into the glass over ice.
