Chinese Mustard Martini

This vodka Martini recipe from the team at House of the Red Pearl is evocative of that classic Chinese American snack: crispy wonton chips dipped in creamy hot mustard.

Ingredients

  • 1 1/4 oz. vodka
  • 1/2 oz. mustard brine
  • 1/2 oz. Lustau blanco vermouth
  • 1/4 oz. olive oil
  • Tools:mixing glass, strainer
  • Glass:Nick & Nora
  • Garnish:sidecar of wonton chips

Preparation

Add all of the ingredients to a mixing glass with ice. Stir to chill and strain into a chilled glass.
Mustard BrineAdd 1/4 cup of Dolin dry vermouth, 2/3 Tbsp. of white wine vinegar, 1/2 Tbsp. of kosher salt, 1 1/3 oz. of mustard powder, and 1/2 cup of filtered water to a nonreactive container. Stir with a whisk until fully incorporated. Seal and store in the refrigerator where it will keep for 4 weeks.
