Belleville: A Bourbon and Cassis Cocktail

At Atlanta bistro Little Sparrow, the cocktails skew classic with French accents. This Manhattan-inspired cocktail balances bourbon with crème de cassis, sweet vermouth, and a French bitter for an elegant and layered sipper.

Ingredients

  • 3/4 oz. bourbon
  • 3/4 oz. crème de cassis
  • scant 1/2 oz. Bigallet China China
  • 1/4 oz. sweet vermouth (Little Sparrow uses Bordiga Rosso)
  • 1/4 oz. sweet vermouth (Little Sparrow uses Lustau Vermut Rojo)
  • Tools:mixing glass, barspoon, strainer
  • Glass:rocks
  • Garnish:lemon peel (not expressed)

Preparation

Combine all of the ingredients in a mixing glass with ice and expressed lemon peel. Stir to chill, then strain over a large ice cube in the glass. Garnish with a lemon peel.

Note“This cocktail calls for a very under-utilized technique called the ‘Royal Stir’ where we incorporate a lemon peel in the mixing glass to gently add brightness and texture during the stir—but not getting in the way of the aromatics of the final cocktail via an expression.
