A mezcal cocktail with bounce and body.

An alpine amaro and the rich fruitiness of cassis add bounce and body to this mezcal cocktail from 2023 Imbibe 75 Person to Watch, Christine Wiseman. Piloncillo is a type of raw sugar frequently used in Mexican cuisine, and piloncillo cones can be found at specialty markets and from online retailers.

Ingredients

  • 1 1/2 oz. mezcal
  • 1/2 oz. Amaro Braulio
  • 1/4 oz. crème de cassis
  • 1/4 oz. piloncillo syrup
  • Tools:barspoon, strainer
  • Glass:rocks
  • Garnish:grapefruit twist

Preparation

Stir all of the ingredients with ice, then strain into a glass filled with a single large ice cube, and garnish.

Piloncillo Syrup In a saucepan over medium heat, combine one 8-oz. cone of piloncillo with 1 cup of water (this recipe can be scaled up or down, just keep the piloncillo and water at equal parts). Stir until the sugar has fully dissolved, then bottle for use; keeps refrigerated for up to 1 month.
