50/50 Tomato Margarita

A savory low-proof cocktail for summer.

In our July/August 2023 issue, actor and comedian Eric André shares one of his favorite cocktail-focused Instagram accounts, @VeryGoodDrinks (by Demi Close and Jazzton Rodriguez). André is especially a fan of their Tomato Margarita, which was inspired by the 50/50 Margarita by Natasha Bermudez, bar director of New York’s Llama San.


  • 1 oz. mezcal
  • 1 oz. manzanilla sherry
  • 3/4 oz. salted tomato syrup
  • 3/4 oz. fresh lime juice
  • Tools:shaker, strainer
  • Glass:double rocks
  • Garnish:salt and pepper, cherry tomatoes


Rim a glass with salt and pepper, fill with ice, then set aside. Add all of the ingredients to a shaker with ice. Shake vigorously for 10-20 seconds. Strain into the prepared glass, then garnish.

Salted Tomato SyrupAdd 150g of ripe tomato to 150g of white sugar. Macerate overnight at room temperature, then strain out the solids. Add 2% salt by weight (3g) to the mixture, stirring to combine. Refrigerate for up to 1 week.

TipFor a lighter taste, use a ratio of 1 1/2 oz. manzanilla sherry to 1/2 oz. mezcal.
