Dirty Dick’s Polynesian Remedy

A Parisian twist on the Penicillin cocktail.
Straight from Paris, this take on Sam Ross’s Penicillin cocktail replaces whisky with rum and adds a little orgeat to the mix.
Ingredients
- 1 3/4 oz. dark rum
- 1/2 oz. orgeat
- 1/2 oz. ginger syrup
- 1/2 oz. honey syrup (1:1)
- 1 oz. fresh lemon juice
- 4 dashes smoky single-malt scotch
- Tools:shaker, strainer
- Glass:rocks
- Garnish:candied ginger, lemon wheel and pineapple leaf
Preparation
Shake all of the ingredients with ice, then strain into an ice-filled rocks glass. Garnish.
