Travis Dutton created this drink as part of 355 Bar’s Werner Herzog-inspired menu, which they served in early 2013. Unlike the often head-scratching nature of a Herzog films, this light, bright drink goes down easy.
1 1/2 oz. dry, London dry gin
1/2 oz. fresh lime juice
1/2 oz. fresh lemon juice
½ oz. chamomile syrup
3 dashes tiki bitters (or substitute Angostura if needed)
Tools: shaker, strainer
Glass: coupe
Combine all ingredients in a shaker with ice, shake vigorously and strain into a chilled coupe.
Chamomile Syrup
1 cups water
1 cups unrefined cane sugar
5 bags organic premium chamomile tea
Place water and cane sugar into a medium saucepan and heat until just under a boil. Remove from heat and add the chamomile tea. Let tea steep for 25 minutes then remove tea and allow syrup to cool. Then place syrup into an attractive glass container and refrigerate. Syrup will stay fresh for 2 weeks.
