Armenian Apple

Easy-drinking Pimm’s flavors this spritzy combo of gin, apricot and ginger beer.

1 1/2 oz. Pimm’s No.1
1/2 oz. gin
3/4 oz. fresh lemon juice
3/4 oz. apricot syrup (see below)
2 oz. ginger beer
1 full dropper Bittercube Jamaican #1 bitters (or substitute Angostura)
Yellow Chartreuse
Tools: shaker, strainer
Glass: goblet
Garnish: fresh or dried apricot (optional)

Rinse a goblet with yellow Chartreuse and set aside. Combine all ingredients, except ginger beer, and shake with ice. Strain into the goblet, add ice and top with ginger beer. Garnish, if using.

Apricot Syrup: Combine 2 cups each of water and granulated sugar in a small saucepan over medium-low heat and add 6 pitted and quartered fresh apricots (you may substitute 6 oz. of dried apricots). Let simmer slowly, stirring occasionally, for 20-30 minutes. Strain into a jar and refrigerate for 24 hours before using. Keep refrigerated and use within 2 weeks. Yields about 3 cups.
