Bodega Kitty: An Alcohol-Free Pineapple Coconut Drink

Enjoy Piña Colada vibes without any of the booze by shaking up this alcohol-free pineapple coconut drink by Enrique Rodriguez of So & So’s Neighborhood Piano Bar in New York City.

Ingredients

  • 2 oz. coconut milk
  • 2 oz. pineapple juice
  • 1 1/2 oz. vanilla cinnamon syrup
  • 1/2 oz. fresh lime juice
  • Tools:shaker, strainer
  • Glass:ceramic cup
  • Garnish:coconut foam

Preparation

Add all the ingredients to a shaker with ice. Shake to chill and strain into the cup. Top with coconut foam.
Vanilla Cinnamon SyrupCombine 1 1/2 cups of white granulated sugar, 1 cup of hot/nearly boiling water, 2 cinnamon sticks and 1 1/2 oz. bourbon vanilla extract into a pot and stir until sugar is dissolved. Cool syrup in the refrigerator for 2 hours, then strain into a bottle for use. Keeps refrigerated for up to 1 month.
Coconut FoamMix 5 oz. of demerara sugar, 6 oz. of coconut milk, 1/3 tsp. of salt, and 3 oz. of water together and pour into a whipped cream dispenser. Add 2 oz of egg white into the dispenser, shake, charge with ISI 3 times and you are ready to foam. An alternative to the ISI is to use a handheld mixer to whip the same ingredients and measurements. Keeps refrigerated for up to 5 days.
