Paul Ramirez, partner and head bartender at Brooklyn bar We Got Company, started with a garnish and worked his way backward for this Sleepwalker coffee cocktail. “I set out to make a bourbon drink so I could utilize my mother’s family bourbon ball recipe as a garnish,” Ramirez says. “In the end, I decided to pivot to my father’s Mexican heritage and use tequila. We revamped the recipe and the tequila chocolate ball was born.” The drink was also originally conceived as a hot beverage, but it can be prepared hot or cold depending on personal preference—and the weather.
