A refreshing tonic for warm days.

Whether one views this cocktail from Le Loup in Nashville as a Bee’s Knees riff with rum or a Daiquiri with minted honey syrup, it makes for a refreshing tonic on a hot day regardless. The flourish of matcha powder across its foam gives the drink a touch of earthiness that rounds out the richness of the honey and rum.

Ingredients

  • 1 1/2 oz. rum (Le Loup uses equal parts Diplomatico and Flor de Caña)
  • 3/4 oz. fresh lime juice
  • 1/2 oz. minted honey syrup
  • 1 egg white
  • Tools:shaker, strainer
  • Glass:coupe
  • Garnish:matcha dust

Preparation

Add all of the ingredients to a shaker with ice and shake. Double strain and dry shake (without ice). Strain into a chilled coupe. Garnish with matcha dust.

Minted Honey SyrupMix 15 oz. of plain honey syrup (1 1/2:1 honey to water) with 10 oz. of hot water. Let the honey syrup cool down. In the meantime, submerge 30 grams of fresh mint leaves in ice water for 20 seconds. Blend the honey syrup with the mint leaves on high speed in a blender. Afterward, gently strain through cheese cloth immediately. Will keep for 4 days in the refrigerator.
