The Porn Star Martini gets extra tropical.

Los Angeles bartender Adam Fournier amplifies the tropical flavors in this variation of the Porn Star Martini, which was created by Douglas Ankrah and is considered a modern classic. Fournier’s riff, dubbed Born a Star Martini, incorporates a passion fruit-mamey sapote syrup.

“We wanted something that felt uniquely Southern Californian so we looked at natural flavor pairings and eventually struck gold with mamey sapote,” he says. “The mamey lends a wonderful texture and weight to the passion fruit while still staying tropical and bright.” If you can’t find mamey, Fournier says the more ubiquitous mango can be subbed in.

Ingredients

  • 1 oz. vodka
  • 1/2 oz. vanilla syrup
  • 3/4 oz. passion fruit-mamey (or mango) syrup
  • 3/4 oz. fresh lime juice
  • 3 oz. dry sparkling wine
  • _______________________________
  • vanilla syrup
  • 500g sugar
  • 500g hot water
  • 2 vanilla beans
  • _______________________________
  • passion fruit-mamey (or mango) syrup
  • 600g passion fruit purée
  • 400g mamey or mango
  • 225g sugar
  • Tools:strainer, fine-mesh strainer, shaker
  • Glass:coupe
  • Garnish:dehydrated (or fresh) lime wheel

Preparation

Add the first 4 ingredients to a shaker. Shake hard with ice. Double strain into a chilled coupe. Top with sparkling wine. Garnish.

Vanilla Syrup Split the vanilla beans in half and scrape the insides. Steep the spent vanilla and beans in hot water for 10+ minutes to taste. Strain out the vanilla. Whisk infused water together with sugar until fully incorporated. Store in a clean glass container under refrigeration for up to 3 weeks.

Passion Fruit-Mamey (or Mango) Syrup In a high-speed blender blend together the passion fruit, mamey, and sugar until fully incorporated. Pass through a chinois. Store in a clean glass container under refrigeration for up to 3 weeks. If mamey is unavailable, mango can be substituted.
