Perhaps no bartender in the U.S. has made as many French 75s as New Orleans bartender Chris Hannah, who helmed the bar for many years at Arnaud's French 75 Bar and can now be found at Jewel of the South. "Holding a French 75 suitably made with Cognac is as close as a cocktail comes to gospel," he says. In this variation on the classic, Hannah uses a base of Rémy Martin 1738 and adds layers of richness by bringing fig jam and black tea into the mix. "I really enjoy the bold nuttiness as well as the floral and slight citrus in the 1738; it's lovely to see its approachable complexity shine through in a drink."
