Concord Grape and Rosemary Soda

A grown-up take on grape soda.

With autumn’s annual grape harvest comes the nostalgic flavor of Concord grapes. In this recipe, the fresh fruit lends sweetness to a slightly more grown-up grape soda.

Ingredients

  • 2 oz. grape-rosemary syrup
  • 1/2 oz. fresh lemon juice
  • 8 oz. chilled soda water
  • Tools:barspoon
  • Glass:Collins
  • Garnish:rosemary sprig

Preparation

Stir all of the ingredients in a glass to combine, then fill the glass with ice and garnish.

Grape-Rosemary SyrupProcess the 1 lb. Concord grapes (to yield 2 cups fresh juice) in an electric juicer, then fine strain the juice, or purée in a food processor or blender and strain through cheesecloth. In a saucepan, bring the juice and 2 cups of granulated sugar to a boil, stirring frequently. Add 2 sprigs of rosemary to the mixture and reduce the heat to low; simmer for 15 minutes, then remove from heat and allow syrup to cool. Bottle and refrigerate for up to 10 days.
