Taking inspiration from Vinho Verde, the newest release from Argus Cidery pushes the boundaries of the category. Unfiltered and unpasteurized, the bright, fizzy 100% perry captures the soft sweetness of its base fruit with a snappy “young wine” characteristic, thanks to owner and winemaker Wes Mickel’s (one of our 2017 Imbibe 75 People to Watch) decision to use a lager fermentation process. “We were looking for tropical fruit notes with a crisp, citric balance to complement the slight sweetness and backend bubbles,” he says.
