Honey syrup and garden-fresh basil offer an additional layer of summery refreshment in the already cooling Tom Collins.
1 1/2 oz. dry gin (McCarthy uses NOLET’S Silver) 3 lemon wheels 1/2 oz. honey syrup (1:1) 1/2 oz. fresh lemon juice 3 fresh basil leaves Ice cubes Tools: shaker, muddler Glass: Collins Garnish: lemon wheel
In the base of a shaking tin gently muddle lemon wheels, honey syrup and fresh basil. Add remaining ingredients, except club soda, and shake with ice cubes. Pour into a Collins glass, top with soda and garnish.
