Sotol y Cucumber Cocktail

Sebastian Jaramillo of Jajaja in New York highlights the vegetal notes of sotol with the cooling freshness of cucumbers and the earthiness of green tea in this light and easy-drinking cocktail.

Ingredients

  • 1 1/2 oz. sotol (Jajaja uses Casa Lotos)
  • 1 oz. fresh cucumber juice
  • 1/2 oz. green tea syrup
  • 1/2 oz. fresh lime juice
  • Tools:shaker, strainer
  • Glass:rocks
  • Garnish:cucumber ribbon

Preparation

Combine all of the ingredients in a shaker. Add ice and shake vigorously. Strain into the glass and garnish.
Green Tea SyrupBring the 1 cup of water to a gentle simmer. Remove from the heat and steep the 2 green tea bags for 5 minutes. Remove the tea bags and stir in 1 cup of granulated sugar until completely dissolved. Let the syrup cool completely. Transfer to a clean bottle and refrigerate. Will keep for up to 2 weeks refrigerated.

Tip: For a stronger green tea flavor, steep the tea for up to 8 minutes, but avoid going much longer to prevent bitterness.
