Live Laugh Laphroaig: A Clover Club Riff

Even though Scotch Lodge bartender Joey Bradford built this scotch-based Clover Club riff around Laphroiag Oak Select, he says that any peated scotch will work as well. “With Laphroaig Oak Select as a starting point, the raspberry syrup came to mind as a potential flavor to pair with (smokey and fruity work weirdly well together in my opinion),” he says. “And then my mind immediately went to a Clover Club.” He knew he hit the mark when his scotch-averse guests gave it their seal of approval.

Ingredients

  • 1 1/2 oz. peated scotch (Scotch Lodge uses Laphroaig Select)
  • 1 oz. fresh lemon juice
  • 1/2 oz. Cocchi Americano
  • 1/2 oz. raspberry syrup
  • Tools:shaker, strainer, fine-mesh strainer
  • Glass:Nick & Nora

Preparation

Add all of the ingredients to a shaker with ice. Shake to chill. Fine strain into the glass.
Raspberry SyrupAdd 3 3/4 cups of sugar, 4 cups of fresh raspberries, and 2 cups of water to a blender and blend for 7 to 8 minutes. Strain through a nut milk bag, squeezing the bag to get all the syrup. Will keep in the refrigerator for 3 to 4 weeks.
