Laurel Martini From True Laurel

For a Martini evocative of Northern California’s cool coastal terrain, stir up this herbaceous sipper from True Laurel in San Francisco. Co-owner and bar director Nicolas Torres makes a tincture using California bay laurel, a plant native to the Bay Area, for the cocktail, complementing the gin’s juniper aroma with the plant’s spicy, floral notes. A Meyer lemon peel is expressed over the finished cocktail for sweet, citrus brightness. “For us, the Martini isn’t just a combination of gin and vermouth,” Torres explains. “It’s an opportunity to express place.”

Ingredients

  • 1 1/2 oz. juniper and citrus-forward gin (see Note)
  • 1 1/2 oz. dry vermouth (see Note)
  • 1/4 oz. Quinquina
  • 3/4 tsp. bay tincture
  • Tools:mixing glass, barspoon, strainer
  • Glass:Martini
  • Garnish:express with Meyer lemon peel, 1 drop of bay tincture, California bay leaf

Preparation

Add all of the ingredients to a mixing glass with ice. Stir until very cold, then strain into the glass. Express with Meyer lemon peel and add one more drop of tincture on top. Garnish.
Bay TinctureAdd 1 cup of fresh California Bay Laurel, not sweet bay, to 6 oz. of vodka, macerate, and let sit for at least a week. Afterward, strain out the leaves.
NoteFor the gin, True Laurel uses a mix of Fords and Botanist gins. For the vermouth, it’s a mix of Dolin Dry and Berto Dry Vermouth.
