Carefree Hwy: A Raspberry Gin Highball

A cooling cocktail made for poolside sipping.

The Drift Hotel in Nashville created this pink raspberry and gin highball cocktail for poolside sipping. Berry sweetness and juniper notes are brightened and balanced by citrus and rounded out with the kick of peppercorn. Muddle fresh raspberries for immediate enjoyment or wait a day by infusing gin with raspberries.

Ingredients

  • 2 oz. gin (or raspberry-infused gin)
  • 3/4 oz. fresh grapefruit juice
  • 3/4 oz. pink peppercorn syrup
  • 1/2 oz. fresh lime juice
  • sparkling water, to top
  • 4-5 raspberries (if not using infused gin)
  • Tools:shaker, strainer, fine-mesh strainer
  • Glass:Collins
  • Garnish:fresh raspberries

Preparation

If muddling: Add 4-5 fresh raspberries to a shaker and muddle. Add the other ingredients, except the sparkling water, to the shaker with ice. Shake to chill, then fine strain into an ice-filled glass. Top with sparkling water and garnish.
Pink Peppercorn SyrupAdd 1/2 tsp. pink peppercorn, 1/2 tsp. black peppercorn, 1 cup of white sugar, and 1 cup of water to a blender and blend for 1 minute. Fine strain into a sealable container. Will keep in the refrigerator for 2 weeks.
Raspberry-infused Gin (Optional)Muddle 1 pint of raspberries and mix with 750ml of gin in a sealed container. Let infuse at room temperature for 24 hours. Strain through a fine-mesh strainer to remove solids before using. Will keep in the refrigerator for 2 weeks.
