Papaya Smoothie

A blended summer treat with a burst of tropical flavor.

Cooking con Omi: A Love Letter to Puerto Rican Home Cooking author Omi Hopper loves the classic batida de lechosa, but since “it’s too much sugar to have on a regular basis” she created a healthier version with less sugar. Hopper uses dates and mango chunks, which she says can be swapped out for any tropical fruit, instead of sugar to sweeten her papaya smoothie. “When I drink this smoothie, I still enjoy a burst of flavors from home, and I feel great knowing it’s good for me,” Hopper writes.

Ingredients

Yield:3-4
  • 2 cups frozen or fresh ripe papaya, peeled, deseeded, and cut into chunks
  • 1 cup frozen or fresh mango, cut into chunks
  • 4 to 6 dates, pitted, to taste
  • 1 tsp. vanilla extract
  • 1 Tbsp. fresh lime juice
  • 1 cup almond milk
  • Ice cubes (optional)
  • Tools:blender
  • Garnish:fresh mint leaves (optional)

Preparation

In a blender, combine the papaya, mango, dates, vanilla extract, lime juice, and almond milk. Blend until smooth and creamy.

Taste the shake and add more dates if needed for additional sweetness. Blend again to incorporate.

If you prefer a colder, slushier drink, add a handful of ice cubes to the blender and blend until smooth.

Pour into glasses and garnish.
