P&P Pisco Cocktail

This fizzy pisco cocktail matches the floral qualities of pisco with the earthiness of Pimm’s.

1 oz. pisco
1 oz. Pimm’s No. 1
¼ oz. maraschino liqueur
½ oz. fresh lime juice
½ oz. fresh lemon juice
¼ oz. rich simple syrup (2:1)
3 dashes Angostura bitters
Chilled ginger beer, to taste
Tools: shaker, strainer
Glass: Collins
Garnish: mint sprig, cucumber, lemon

Combine ingredients in a shaker with ice and shake to chill. Strain into a Collins glass filled with crushed ice. Top with ginger beer and garnish.
