The latest release from the House of Suntory is a departure from the company’s traditional approach to balancing malts and grains. With a blend of American white oak cask malt whisky from the Hakushu distillery and heavy grain whisky from the Chita distillery, Suntory Toki mellows into a combination that brings the fresh basil and green apple flavor of the former together with sweet vanilla and oak of the latter. It’s a well-balanced match with a silky texture and slightly spicy finish that makes for delicious Japanese Highballs. Just fill a glass with ice, add an ounce or two of whisky, stir to chill, then top with sparkling water and a twist of lemon.
