Spring Fling

1½ oz. London dry gin
½ oz. Oloroso sherry
½ lemon, juiced
½ oz. honey syrup (1:1 honey and water)
6 raspberries
2 sage leaves
Soda water
Tools: shaker, strainer
Glass: Collins
Garnish: fresh raspberries and sage

Muddle the raspberries in a shaker tin. Top with ice and remaining ingredients. Shake until chilled, double strain into a glass,  top with soda water and garnish.
