A crisp, fruity rosé takes the lead in this Paloma riff, making for an easy-drinking summer cocktail. “While the tequila could be considered the base of the drink, the wine is what creates the flavors reminiscent of a classic Paloma,” says Susie Scott, beverage director and sommelier at The Carillon in Austin. “It’s less sweet with more complex fruit flavors.”
3 oz. rosé
¾ oz. blanco tequila
¾ oz. Lillet Blanc
½ oz. fresh lemon juice
½ oz. demerara syrup (1:1)
2 dashes grapefruit bitters
Tools: mixing glass, barspoon
Garnish: grapefruit twist
Combine all the ingredients in a mixing glass and stir to chill. Strain into a Collins glass with fresh ice and top with soda, then garnish.
