The Northside Collins matches gin and grapefruit liqueur with the cooling power of cucumber and mint.
2 oz. gin
½ oz. grapefruit liqueur (Bucholz uses Giffard)
1 oz. simple syrup (1:1)
1½ oz. fresh lime juice
3 slices fresh cucumber
Chilled club soda
Tools: muddler, shaker, strainer
Garnish: large sprig of fresh mint
Muddle the cucumber in a shaker and add the remaining ingredients, except the club soda. Shake with ice and strain into ice-filled glass. Top with club soda, then garnish.
