new pal cocktailFor the New Pal cocktail served at Dear Irving on Hudson, bartender Meaghan Dorman looked to the 2006 book The Art of the Bar by Jeff Hollinger and Rob Schwartz. “The New Pal is a riff on the Old Pal cocktail from the Savoy Cocktail Book,” says Dorman. “They swapped in sweet vermouth instead of dry and rye instead of Canadian whiskey.”

1½ oz. rye whiskey
¾ oz. Campari
¾ oz. sweet vermouth
2 dashes Peychaud’s bitters
Dash of absinthe
Tools: mixing glass, barspoon
Glass: rocks
Garnish: orange peel

Stir all the ingredients together in a mixing glass with ice, then strain into a rocks glass over a large ice cube. Express an orange peel over the top, then use as a garnish.
