Fisher’s Mezcal Old Fashioned

For his take on the Mezcal Old Fashioned, bartender Mauro Fisher sought to achieve complex flavors using an uncomplicated formula. On the cocktail menu at Sawyer in Seattle, a 2019 James Beard semifinalist for Best New Restaurant, the Fisher’s Fashioned seamlessly blends mezcal with a time-tested Italian amaro.

1½ oz. mezcal
¾ oz. Cynar
¼ oz. Demerara syrup
2 dashes Angostura bitters
2 dashes orange bitters
Tools: mixing glass, strainer
Glass: rocks
Garnish: orange twist

Stir all the ingredients with ice to chill then strain into rocks glass over a large ice cube and garnish.
