Today’s Drink of the Week—Liber & Co.‘s Pineapple Gum Syrup—has been a game changer for us this summer. Known for its use in classic Pisco Punch, pineapple gum (or gomme) syrup is a pineapple-flavored syrup mixed with gum arabic, an all-natural emulsifier derived from African acacia trees. The gum component elevates the syrup to a thicker texture that makes for a super-silky mouthfeel in cocktails. Each bottle is made with 60 percent pineapple juice, lending a pure fruit flavor to a range of cocktails. Try adding it to your next classic Jungle Bird or Royale Cup #4, or use it to put a simple twist on an Old Fashioned or Margarita. It’s a syrup we aim to always have on hand, and we can’t wait to see what it brings to our cocktails this fall and winter, too.
