Drink of the Week: Glendalough Wild Botanical Gin

Irish distillery Glendalough has been making wild-foraged, seasonal gins from the flora gathered from the surrounding Wicklow countryside since 2015. Now, stateside drinkers can get a taste of the new Wild Botanical Gin, a release intended to marry the flavors of all seasons with a botanical bill including elements like sweet woodruff, watermint, ox eye daisies and wild blueberries on top of classic gin ingredients like juniper and angelica root. The resulting spirit is bright on the nose with citrus and pine with a subtle, earthy sweetness and an almost-creamy finish. It’ll mix beautifully in a Gin & Tonic, or give it a spin in something the Cirrus Gin Cocktail where it can mirror the sweetness of the berries and the fresh, herbal aromas. $30, ezras.com
