To mimic the reds and pinks of a summer sunset, this low-proof aperitif cocktail combines red Campari with the russet hue of Cocchi di Torino and soft pink rosé.
1 oz. Campari
1 oz. Cocchi di Torino
¾ oz. fresh lemon juice
¾ oz. sage syrup
2 dashes Angostura bitters
2 oz. brut sparkling rosé
Tools: shaker, strainer, fine strainer
Garnish: amarena cherry and sage leaf
Add all the ingredients except rosé to a shaker with ice. Shake and then double strain into glass over fresh ice. Top with 2 oz. of brut sparkling rosé and garnish.
Sage Syrup: Combine 1 cup of sugar with 1 cup of water in a saucepan over medium heat, stirring until the sugar is dissolved. Remove from heat and allow to cool to room temperature. Add 7-10 fresh sage leaves and let sit for 24 hours. Strain out the leaves and bottle for use. Refrigerate for up to 2 weeks.
