ABV Debuts Over Proof, A Rotating Pop-Up - Imbibe Magazine Subscribe + Save

New things are in the works at ABV in San Francisco (our 2015 Bar of the Year) as the bar team prepares to transform its small mezzanine space into a pop-up called Over Proof, where a rotating cocktail menu will highlight a different spirit four times a year. “The rotating bar is a lot of work, but it gives us as owners another outlet to be creative, while letting the staff help us and take ownership in the development of each iteration of the space,” says partner Erik Reichborn-Kjennerud.

The first pop-up will kick off on January 23 with a rum-focused menu called Flip-Flop. The drinks will all feature rum, and the food will be inspired by rum-making regions of the world. After Flip-Flop, the bar will transform into a moody whiskey concept, and the final two iterations will be announced later in the year. The team says they’re looking forward to seeing how the concept is received. “We’re very excited to provide something new to the patrons that already love ABV and also attract new guests who have never been here before,” say Reichborn-Kjennerud.

With only five seats at the bar, and five communal tables, the space will be reservation-only, so be sure to plan ahead.
