Sun-ripened tomatoes are the cherry on top of this cocktail.
1 3/4 oz. gin
1/2 oz. fresh lemon juice
1/2 oz. agave syrup (1:1)
Pinch of kosher salt
4 Sungold tomatoes (or other sweet cherry tomatoes)
Tools: muddler, shaker, strainer, fine-strainer
In a shaker, gently muddle the tomatoes. Add other ingredients, shake with ice, fine-strain into a chilled coupe and garnish.
