Spanish Crown

This Daiquiri-esque cocktail stays nice and light with a cooling mix of pisco, maraschino liqueur and fresh grapefruit.

1 1/2 oz. pisco
1/2 oz. marachino liqueur
3/4 oz. fresh grapefruit juice
3/4 oz. fresh egg white (pasteurized if you like)
1/2 oz. fresh lime juice
Tools: shaker, strainer
Glass: coupe
Garnish: dash of Angostura bitters and a grapefruit twist

Combine all ingredients and shake with ice. Strain into a chilled glass and garnish.
