John Lermayer amps up the iconic pairing of reposado tequila and lime juice with the vegetal flavor of red bell pepper in this simple variant on the classic Daisy.
4 dime-size slices red bell pepper 1 ½ oz. reposado tequila ½ oz. agave nectar ½ oz. fresh lime juice Chilled club soda Ice cubes Tools: cocktail shaker, muddler, strainer Glass: highball Garnish: spear of red bell pepper
Place the pepper slices in a shaker and gently crush with a muddler. Add tequila, agave nectar and lime juice and fill the shaker with ice. Shake well until chilled, about 10 seconds. Strain into an ice-filled glass and add club soda to taste. Garnish.
