The Enlightenment Cocktail

“The thinking man’s whiskey and a beer, or the poor man’s Champagne Cocktail?” asks Aidan Demarest rhetorically about his recent invention. “Take your pick, it’s delicious.” Demarest uses Woodford Reserve for the bourbon and Edison Light Beer, from Boston’s New Century Brewing Co., in part as a nod to his own workplace. But he says any light-flavored beer will work. 

2 oz. bourbon
1/2 oz. fresh lemon juice
1/2 oz. pomegranate syrup
Light (or light-flavored) beer, chilled
Tools: shaker, strainer
Glass: cocktail

Put the bourbon, lemon juice, syrup and ice in a shaker. Shake and strain into a chilled glass. Top with beer.
