Queen’s Cup

2 oz. Pimm’s
¾ oz. fresh lemon juice
1 oz. cucumber purée (recipe below)
1 oz. lemonade (recipe below)
2 oz. soda water
a few mint leaves
Tools: muddler, shaker, strainer
Glass: highball
Garnish: mint sprig, cucumber slice

 

Muddle all ingredients except soda water in a shaker. Top with ice. Shake and strain over fresh ice into a highball glass. Garnish.

 

Cucumber Purée
2 seedless cucumbers
1 cup water

 

Peel and dice the cucumber. Combine with water in a blender and blend until smooth.

 

Rouge Tomate Lemonade
1 cup fresh lemon juice
1 cup fresh lime juice
2 cups water
1 cup agave syrup

 

Combine all ingredients in a large pitcher. Whisk to combine.
