Cherry tomatoes, red grapes and white rum meet in this market-fresh version of the classic Daiquiri.
1 3/4 oz. white rum
3 cherry tomatoes
3-4 red seedless grapes
3/4 oz. fresh lime juice
3/4 oz. thyme syrup (see below)
Tools: muddler, shaker, strainer
Garnish: lime wheel
Muddle the cherry tomatoes with grapes in a shaker. Add the remaining ingredients and shake with ice. Strain over fresh ice into a glass and garnish.
Thyme syrup: In a small saucepan, combine 1/2 cup of granulated sugar with 1/2 cup of water and 4 fresh sprigs of thyme over medium heat and stir until sugar is dissolved. Remove from heat and let cool. Strain into a bottle and store refrigerated for up to 2 weeks.
