Macoupin Morning

Portugal’s fortified Madeira proves a nice match for aged tequila and passionfruit in this dynamic drink.


1 1/2 oz. reposado tequila

3/4 oz. passionfruit juice

1/2 oz. Madeira (Clark uses Broadbent)

1/2 oz. fresh lemon juice

Dash of simple syrup

Ice cubes

Tools: shaker, strainer, fine strainer

Glass: cocktail

Garnish: flamed orange peel


Combine all ingredients and shake well with ice. Double strain into a chilled glass and garnish.
