Rich molasses syrup adds an exotic dose of flavor to this nicely spiced sipper.
2 oz. spiced rum
3/4 oz. fresh lime juice
2 dashes Angostura bitters
2 dashes orange bitters
1/2 oz. molasses simple syrup (see below)
2 oz. soda water
Tools: shaker, strainer, barspoon
Garnish: long orange spiral, mint sprig
Combine all ingredients, except soda, and shake. Place the orange spiral so that it runs up the inside of the Collins glass. Strain the cocktail over clean ice into the glass. Top with soda and gently stir to combine. Garnish.
For the molasses syrup, combine two cups granulated sugar with one cup of hot water and 2 Tbps. of mild molasses. Stir until the sugar is fully dissolved.
