Rich molasses syrup adds an exotic dose of flavor to this nicely spiced tropical sipper.
2 oz. spiced rum
3/4 oz. fresh lime juice
2 dashes Angostura bitters
2 dashes orange bitters
1/2 oz. molasses syrup (see below)
2 oz. soda water
Tools: shaker, strainer, barspoon
Garnish: long orange spiral, mint sprig
Combine all ingredients, except soda, and shake with ice. Place the orange spiral so that it runs up the inside of the Collins glass. Strain the cocktail over fresh ice into the glass. Top with soda and gently stir to combine. Garnish.
Molasses syrup: Combine 2 cups of granulated sugar with 1 cup of hot water and 2 Tbps. of mild molasses. Stir until the sugar is fully dissolved.
