Apples and spice and everything nice.
1 1/2 oz. Calvados
3/4 oz. Bénédictine
3/4 oz. fresh lemon juice
1/4 oz. pimento/allspice dram
1/4 of a Gala apple, diced
Pinch of fresh thyme
Dash of Angostura bitters
Tools: muddler, shaker, strainer, fine strainer
Garnish: thin slice of apple
In a shaker, muddle apple, thyme and dram. Add the other ingredients and shake well with ice cubes. Double-strain into a chilled cocktail glass, then garnish.
