For his riff on the classic Daiquiri, Manhattan bartender Theo Lieberman adds in a few additional tiki elements. “I love the clove aspects of velvet falernum,” he says, “as well as the richness of orgeat.” But sensing something was still missing from his finished drink, he decided to shake it “bermuda-style” where an orange wedge is added to the mixing tin. “It adds a nice, slightly bitter note and a little orange flavor.”
4 oz. white rum 1 1/2 oz. lime 3/4 oz. orgeat 3/4 oz. velvet falernum 2 fresh orange wedges Ice cubes Tools: shaker, strainer Glass: coupes (2) Garnish: lime wheels Combine all ingredients and shake with ice. Strain into two chilled glasses and garnish.
