Jeshua Madden was inspired to make this drink after sipping its namesake sherry solo. “Lustau is on our menu as an after-dinner drink, but I often use sherry or other ingredients that we would not normally mix [in a cocktail],” he says. “The whiskey barrel bitters have a cinnamon and spice flavor that complements the sherry—the combo makes me think of the holidays.”

 

1 oz. Lustau East India sherry
1 oz. gin
½ oz. cream
1 dash Fee Bros. whiskey barrel bitters
1 whole egg
½ oz. simple syrup
Tools: shaker, strainer
Glass: cocktail
Garnish: cinnamon (optional)

 

Shake all ingredients very thoroughly without ice. Add ice, shake vigorously again and strain into a chilled cocktail glass. Garnish.
